HYDE PARK, N.Y.—The Culinary Institute of America will host its first annual “Brew U” on Saturday, October 8, 2016 at The Egg and Student Commons at the CIA’s Hyde Park campus. Kicking-off the Oktoberfest season, Brew U is an exciting new beer festival that will combine sampling from top breweries with delicious food from the CIA and educational seminars for beer and culinary enthusiasts.

Brew U attendees will have an opportunity to tour the CIA Brewery and talk with Head Brewer Hutch Kugeman in addition to sampling beers and ciders, and talking with regional brewers at this walk-around event. A wide menu of dishes perfectly paired with beer, and included in the price of tickets, will be prepared by CIA chefs and offered alongside brewery stations.

This year focuses on the Hudson Valley’s leading breweries and some of their most exciting beers, selected by the CIA’s Head Brewer Hutch Kugeman.

BREW U SYLLABUS

BEER 101: HOW A HOP BECOMES A BREW (Open-house tours / Ongoing throughout event)

Location: CIA Brewery at The Egg

Seminar Times: Ongoing throughout Brew U event

Host: CIA Students

Description: Students will take Brew U attendees through the CIA’s on-campus brewery to learn about the process of making beer – turning a hop into brew. Starting with the type of hop, they will explain methods that influence the bitterness, flavor, and aroma of the beer.

BEER AND CHEESE PAIRING (30 mins)

Location: MPR A / Student Commons

Seminar Times:  2:30 PM & 3:30 PM

Host: John Fischer, CIA Professor, author of Cheese Identification, Classification, and Utilization, and restaurant beverage service veteran

Description: Professor John Fischer brings together his expertise on choosing and pairing cheese and beers. Fischer will cover types of cheeses that are good for pairing, flavor profiles and tasting notes, as well as how to plan the order of your beer and cheese tasting.

BEER COCKTAILS (30 mins)

Location: MPR B / Student Commons

Seminar Times: 3:00 PM & 4:00 PM

Host: Noelle Guagliardo, Beverage Manager, CIA restaurants

Description: The expansion of beer varieties and flavors in the US has influenced a new trend: beer cocktails. Noelle Guagliardo, beverage manager of the CIA’s Hyde Park restaurants, walks seminar guests through what they need to know about making cocktails with beer.

SOUR BEERS (30 mins)

Location: Student Council Room / Student Commons

Seminar Times: 3:00 PM & 4:00 PM

Host: Anne Becerra, Certified Cicerone

Description: Anne Becerra, the first female Certified Cicerone in New York, will share her expert intel about sour beer, the popular beer style that is really many distinct styles rolled into one. Becerra will cover a range of sour beer styles to help navigate and choose favorites based on personal preference.

SPENT GRAIN DEMONSTRATION (30 mins)

Location: Bakeshop 9 / Student Commons

Seminar Times: 2:30 PM & 3:30 PM

Host: Sean Kahlenberg, CIA Lecturing Instructor of Culinary Arts

Description: CIA Chef Sean Kahlenberg will talk about collecting “spent grains,” the byproduct of beer-making, and how to use them in cooking and baking as he demonstrates a few recipes.

TICKETS & INCLUSION

General admission to Brew U includes all beer and food during the event, access to all tours and educational seminars, and a commemorative tasting glass. The Hudson Valley’s own Roundabout Ramblers will also provide musical entertainment throughout the event.

VIP ticket holders will enjoy an exclusive hour prior to general admission to get a jump on all the sampling. They’ll also have access to their own private room and deck overlooking the majestic Hudson River.
