APPEARANCE: Burnt orange and slightly cloudy, there is just a thin skin of bubbles that remains on top following a vigorous pour.
AROMA: There is orange and some spice, and earthy sage (used in the recipe) is present in the background but does not dominate.
MOUTHFEEL: Medium bodied and drying, the robust champagne-like carbonation is very refreshing.
TASTE: Coriander and a slight licorice (fennel) tang come through in the taste.
OVERALL IMPRESSION: This is the kind of beer that I like when the weather starts to change. The summer sun is high and warming, but there is a cool breeze passing by with the first hints of fall. It’s at once refreshing and thirst quenching and full and hearty. The addition of sage brings a rustic feel to this ale, and would go well with lamb on the grill, or that roast chicken in the oven.
