The Full Sail brewery, founded in 1987, is now independent and employee-owned. It overlooks “the most epic wind and kite surfing spot in the world,” which is the inspiration for the brewery’s labels and artwork.

Paler in color than classic IPAs, the beer is brilliant gold with bronze highlights and a bountiful and beautiful head. A restrained, but delightful nose hints of hops, and it is on the expansive palate and in the bitter aftertaste, that humulus lupulus lets loose. I would like a little more malt flavor to balance the hops, but found this IPA to be good with foods like spicy potato and onion empanadas, fried cod fritters, and raw-milk cave aged Gruyere.

Yowser! Introducing yet another unique hop aroma! Floral and spicy unlike anything that’s preceded it. Almost a lavender-like floral flavor. Quite elegant and distinctive. Hop flavor lingers a bit aggressively, but then remember this is from the Northwest. Classically fruity and classically NW. Hops predominate. Malt takes a backseat. With food it refreshes the palate. Indulge yourself in the pleasures this American IPA offers.

Tempting gold color with deep head of foam. The aroma recalls walking into a London “sweet shop” (candy store) of my youth: gooseberries, melons, pear drops and acid drops clamber out of the glass, with sappy malt and earthy hop resins. Iron-like bitterness coats the tongue with tart fruit and biscuity malt. The finish lingers, becomes dry and bitter with a quinine-like note, with continuing tart fruit and juicy malt. Superb.
