Perfect pour; dense, creamy head; handsome, cloudy gold body. Seductive nose is yeasty and sensual; could easily be mistaken for a gueuze, though not as barnyard-like. Complex fresh, delicate, acidic flavors of apples, peaches and pears balanced with delicious earthy cereals — would actually be pretty good for breakfast with lox and bagels or even pickled hearing. Clean, lasting finish. We experienced this exceptional beer with a selection of raw milk cheeses. Distinctive and worth seeking out!

Pop. The cork slips out. I am engulfed with the aroma of sweet pineapple and fresh cotton candy. Profound golden haze supports the luscious head atop the beer. A closer assessment of aroma reveals extraordinary and complex spice, herb, fruit and earthy/horsey leather. Sharp and refreshing hop bitterness is quickly unzipped at the seams. Poetry is inspired. I taste and immediately realize I am in unchartered country. This beer assassinates all attempts at classification. Live. Dance. Play. Sing. Smile. A beer that engages.
