While tasting this, other beverages popped into the minds of our panel. On the nose: sweet white grape, rustic apple cider, honey blossom, sour hay, lemon citrus and herbs like rosemary, sage and mint. The palate had all that, but not as overwhelming as the nose. It feels wild with a surprising sweetness at the start and a tart, Brettanomyces spicy finish. Highly effervescent but somehow managing to be thin-bodied. It will appeal to those who enjoy dry ciders and will convert white wine drinkers to the wonders of sour beer.
