BROOMFIELD, CO—Rock Bottom Restaurant & Brewery, a polished casual dining establishment featuring a distinctive selection of micro-brewed and specialty beers, recently announced the return of its popular Fire Chief Ale promotion and limited-time menu. Now through March 15, for every pint of Fire Chief Ale sold, Rock Bottom will donate 25 cents to local fire departments and related charities in the communities in which its restaurants operate. The company has raised nearly $2 million in donations since the event’s inception in 1991.

As part of the promotion, Rock Bottom’s local brewers will create their own take on its classic Fire Chief Ale recipe, a medium-bodied, auburn colored ale that gets its sweet side from the caramel and crystal malts, but also picks up a little toasty character for balance. The hand selected hops from the Pacific Northwest lend a crisp and refreshing finish. Additionally, guests can enjoy a limited-time selection of fiery menu items, including:

– Brewery Nachos: Tortilla chips with black beans, cheddar and pepper jack cheeses, tomatoes, jalapenos and red onions served with charred habanero tomato salsa.

– Skillet Chili Cheese Fries: Crispy french fries seasoned to perfection, loaded with cheddar and pepper jack cheeses, smothered in our house-made steak chili and topped with fresh jalapeno, red onions and a dollop of sour cream.

– Three-Alarm Chili (cup or bowl): House-made steak chili is a hearty & fiery chili with grilled Santa Fe steak, poblano peppers, chunky tomatoes, and our house dark beer, slow simmered to perfection by Rock Bottom chefs, with cheddar and pepper jack cheeses, diced red onion, a dollop of sour cream and topped with a fresh jalapeno slice.

– Chili Cheddar Burger: House-made steak chili piled on top of a grilled burger that is served on a grilled onion bun with two full helpings of aged sharp cheddar cheese.

– El Diablo Pizza: Charred habanero tomato salsa with mozzarella, pepper jack, cheddar and asiago cheeses, pepperoni, Andouille and chorizo sausages topped with crispy fried red onions, sliced jalapenos, salsa roja and farmer’s cheese. 

– Chicken Enchiladas: Corn tortillas filled with pulled chicken, sweet & spicy peppers topped with pico de gallo and served with salsa roja and tomatillo salsa, black beans, and red ale rice.
