A Belgian strong dark ale, this bottle-conditioned beer initially appealed to my father during his recent visit because of the manner in which it is made: by a Roman Catholic order of Trappist monks who follow the Rule of St. Benedict. Brewed at the Abbaye Note-Dame de Saint-Remy, the bottle of Rochefort 8 we shared also appealed to his fondness for sweet things, what with its malt and caramel notes and candied sugar mouthfeel. And weighing it at 9.2 ABV, we wisely agreed that this should remain a dessert beer.
