“I guess you could say any lager made in Mexico is a Mexican lager,” says Bringle. “We could make, a doppelbock down here, and it’d still be a Mexican lager.” But, he notes that looking at history and the early brewers who shaped the style, it becomes fun to start peeling back the layers and working to create beers that are filled with nuance. Locally grown corn plays a role in the lagers he is producing.
