Kellerbier traces its history to when beer in Bavaria was stored in underground caves which were natural cellars – or kellers. “Kellerbier” means “cellar beer” and kellerbiers today are a throwback to old lagers. Naturally carbonated and unfiltered, kellerbiers are said to be more flavorful and with a softer mouthfeel. And modern brewers are taking the old idea and applying it to modern lagers, resulting in beer lovers rediscovering a love of lager.

Theresa Schmidt. holds a bachelor’s degree in food science from Germany and a master’s degree in food science from Austria, along with a bachelor’s degree in brewing from Denver, Colorado. She previously taught at a brewing school in Munich, and her expertise spans quality management, beverage analytics, and packaging. Currently, Theresa works in quality assurance for packaging at Paulaner Brewery in Munich, Bavaria, where she manages everything from bottles to container shipments to ensure top-notch quality. Outside of work, Theresa is passionate about traveling and discovering new places. Jack Van Paepeghem is the quality manager at von Trapp Brewing. He received an International Diploma in Brewing Technology from the Siebel Institute and Doemens Academy, currently has an Advanced certification from the Cicerone Certification Program, and is a member of the Brewers Association Draft Beer Quality Subcommittee.
