Who doesn’t like marshmallows?  Ancient Egyptians were the first to enjoy a gooey treat now called marshmallow as early as 2000 BC.  Today, whether it’s in a hot cup of cocoa on a cold winter’s night, or smooshed with chocolate between graham crackers around the campfire, marshmallows are a fun way to add a little sweetness to life.  But what about marshmallow in beer?

Marshmallows add sweetness to beer, obviously.  But quality marshmallows have other flavors, too.  In the hands of a skilled brewer, marshmallows can be used to make novel beers that please tastebuds and even evoke childhood memories.  Marshmallows are more than just a cylindrical confection sold in bulk at the grocery store.  It’s time to understand the true art of marshmallow beer.

As CEO and beer maker, Henok Fentie leads Swedish brewery Omnipollo with a bold vision: to transform the perception of beer—forever.  Omnipollo explores the vast potential of beer, brewing a wide array of styles that challenge traditional boundaries. From marshmallows to unconventional techniques, the brewery isn’t afraid to experiment, engaging in a constantly evolving dialogue with its drinkers.  Henok’s journey into craft beer began in 2006, shortly after graduating from London School of Economics, where he discovered a love for the artistry and culture of brewing. This passion led to a homebrewing hobby, which became the seed that grew into Omnipollo—a brewery that continues to push boundaries and redefine what beer can be.
